Good day, everyone! I hope you're all doing well. Would you like to enjoy some delectable South Indian cuisine? huh?? I'm going to say “TRY THIS” in a louder voice. The most common South Indian dish is Sambar, which we prepare every other day!! There are many different types of sambar from place to place, or should I say from home to household. Here, I'm sharing my Amma's recipe for Arachuvita Sambar. Arachuvita means "Grinded" in Tamil, therefore this sambar contains freshly ground powder, making it more flavorful and delectable! I used carrot in this recipe, but you may use any veggies you like; it also tastes great without them! We make this sambar once a week and serve it with basic rice.We cook this sambar once a week and serve it with a simple chettinad potato fry or a bittergaurd fry. Please try this dish; I am confident you will enjoy it! :)

INGREDIENTS

  • TO PRESSURE COOK DAL:
  • Toor dal- 1/2 cup
  • Turmeric powder- 1 tsp
  • hing- 1 tsp
  • salt- to taste
  • oil- 1 tsp
  • TO GRINDING:
  • Coriander seeds- 1 tsp
  • Channa dal- 1 tsp
  • Coconut – 1 tsp
  • Dry red chilli- 3
  • Fenugreek seeds- 1 tsp
  • TO MAKE SAMBAR:
  • Small onions- 1/2cup
  • Tomato- 1
  • chillies- 2
  • carrot – 1
  • tamarind extract- 2 tbs
  • Chilli powder- 1 tsp
  • TO SEASONING:
  • Oil- 1 tsp
  • Mustard seeds- 1 tsp
  • Cumin seeds- 1 tsp
  • Curryleaves- 1 string
  • iNSTRUCTIONS

    1. Add toor dal, turmeric, hing, salt, oil and 2 cups of water pressure cook for 5 whistles.
    2. Roast and grind the ingredients given under the list.”TO GRINDING”
    3. Add onions, tomato, chilli + 2 cups of water into the cooked dal, cover and cook for 10 minutes
    4. Add tamarind extarct, chilli powder, grinded mixture, salt cover and cook for 10 minutes.
    5. Heat up the small pan add all the ingredients given under “TO SEASONING”
    6. Add them to sambar and switch off the stove.
    7. Arachuvita sambar is ready!
